Vanilla christmas cookies

This recipe is my great grandma's recipe, which my grandma insists should be followed to the T. I hope you enjoy sharing these cookies.

Equipment

  • 1 Kitchen machine or a food processor
  • 1 Scale
  • 1 Bowl
  • 1 Small knife
  • 1 Cutting board
  • 1 Meat grinder with cookie attachments

Ingredients
  

  • 530 g Flour
  • 400 g Butter
  • 200 g Sugar
  • 1 juicy Vanilla bean

Instructions
 

  • Add flour, sugar and butter to a bowl
  • Half the vanilla bean and scrape out the vanilla seeds. Use a bit of sugar and your knife to mix the seeds properly. Add these to the bowl. Mixing with sugar helps prevent the seeds from clumping together.
  • Chop the vanilla bean shell into small pieces and add them to the bowl.
  • Mix the mixture either with the kitchen machine, food processor or simply with your hands.
  • Cool off the mixture in a bag or with a lid on. The mixture should preferably sit for 24 hours for the vanilla to properly infuse, but you can make the cookies after just an hour of chilling in the fridge.
  • Ensuring your dough stays cool, use a meat grinder with a star-shaped cookie attachment. Press out long strands of cookie dough.
  • Cut the strand into about 3 cm long pieces. Enclose these into a circle and transfer to a baking sheet.
  • Bake the cookies in a preheated oven at 200 degrees celsius, equal top and bottom heating or 180 degrees celsius fan heated oven. Bake only one sheet at a time until they are becoming lightly browned.
  • Cool off the cookies and transfer to a cookie tin. Enjoy!
